Looking for a green cookie recipe that uses no dyes, no spinach– nothing green at all? These Magic Green Cookies use a natural chemical reaction to create a fun surprise!

I’ve been researching natural ways to make fun colors in food lately, and found the idea for these Magic Green Cookies. To be honest, I wasn’t sure if it would even work, and if it did, I figured the reaction wouldn’t be that impressive. Boy was I wrong!

Immediately after baking, the green was very light, but each day they got darker. So I’d recommend these as something you’d want to make the day before. By 24 hours after baking them, they were quite dark green. They did continue to get more green on day 3, but they also start to dry out. So I think the sweet spot on these is making them a day ahead of when you want to serve them.

These cookies aren’t the most flavorful. Sunflower butter gives a mildly nutty flavor, but I definitely wouldn’t choose this cookie recipe as an everyday favorite. Their appeal is definitely in their wow factor.

Let your kids help you make these. They’ll be shocked that without putting anything green into the cookies, they magically turn green. This is caused by a chemical reaction between the baking soda and the chlorophyll in the sunflower butter.

Can the Sunflower Butter be substituted in these Magic Green Cookies?

No.

The sunflower butter is the star of the show here. It’s what causes the chemical reaction to happen, so if you swap it out your cookies won’t turn green (unless you add dye to them– but the point of these cookies is green without dye).

I know that sunflower butter is expensive. If anyone has a source for cheap sunflower butter please let me know. However, despite expense, it’s an absolutely vital ingredient in these cookies, and cannot be swapped.

Ingredients

  • 1 cup sunflower butter
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp corn starch
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups chocolate chips

Instructions

  • Preheat oven to 375º. Line a cookie sheet with parchment paper or spray.
  • In a mixing bowl, cream together sunflower butter and sugar.
  • Mix in eggs and vanilla.
  • In another bowl, combine flour, corn starch, baking soda, and salt. Stir well.
  • Add the dry ingredients into the wet ingredients and stir well.
  • Stir in chocolate chips.
  • Using a cookie scoop, scoop and roll cookie dough.
  • Place on cookie sheet and bake 8-9 minutes.
  • Cool-- preferably overnight to deepen the green color.
  • Store in an airtight container.
