Rotisserie Chicken Salad Sandwiches are simple to make, but full of flavor and texture!
Springtime always gets a little crazy, don’t you think? There’s the garden to prepare, and the cold hardy seeds to plant. There’s spring cleaning, and trying to get fresh air to touch all the areas of the house that got a little stuffy over the winter.
There’s receiving the orders for trees and bushes that you picked out last fall and that will of course be delivered during a busy week in which you really don’t have time to stop and dig holes– but you must, because they’re bare root and they need to get planted immediately.
There’s searching for a tractor for more than a year, and finally finding one that fits with what you want, at a price you love. It just happens to be located a little over an hour away, so you’ve got to drive there to check it out, and then drive there again to try driving it, and then drive there again to finally load it up and bring it home.
There’s building a chicken coop, and buying chickens. Then feeding and watering the chickens every day, and cleaning out the coop, and buying bigger feeders and waterers as they grow, and realizing you really didn’t know what you were getting yourself into.
So. If your spring has been similar to mine, you may be feeling a little tired and worn out. I didn’t get a new blog post up last week, at all, and I have to admit that I’ve struggled trying to get this one ready.
During times like these, I fall back on easy recipes for our meals. When I’m at Costco buying milk, I’ll grab a rotisserie chicken and rolls or croissants, and we’ll have slices of breast with potatoes or rice for dinner that night. The following day I’ll pull all the meat off, and we can usually get two meals from that, so I’ll do something like a soup or casserole with half, and then I usually make rotisserie chicken salad sandwiches, because my kids love them.
I think the thing my kids love the most about these chicken salad sandwiches is that I mix up the ingredients when I make them. I don’t always make them exactly the same, but instead make use of the items we have on hand.
What I love about these chicken salad sandwiches is that they’re easy to make, full of flavor, and my kids will eat them and not a single one of the three kids has anything to complain about! Win!
This recipe doesn’t have to be made with a rotisserie chicken. I just do it that way since it makes for a simple meal, but if you’d like to substitute cooked chicken breasts or thighs, feel free! You can even substitute turkey if you have leftovers at Thanksgiving.

Ingredients
- 2 C. chopped chicken
- 1 handful spinach, chopped
- 2 stalks celery, sliced
- 1 handful pecans or other nuts, chopped
- 1 handful dried cranberries
- 3 big dollops mayonnaise
- salt and pepper, as needed
Instructions
- Combine all ingredients in a bowl.
- Serve on rolls or croissants.
