As I’m sure you know, there was a pretty major football game yesterday (that’s an understatement, right?). Well I personally don’t care for football at all. Don’t hate me! I get that football is really important to a lot of people, but I didn’t grow up watching it, and I just don’t really get it. But one thing I do get is that Super Bowl parties have yummy food!
I made my usual bacon wrapped dates stuffed with pecans, since Dan always asks me to make those, but I wanted to try something new as well. I kept looking through recipe after recipe thinking, “Oh that looks good,” or “That would be tasty,” but not really hitting the “That’s the recipe” kind of moment until I saw this Cheesy Bacon & Spinach Dip from Like Mother, Like Daughter.
The recipe sounded delicious! I started making it and realized that it made much less dip than I had been expecting, so I added in more of certain things until I came up with a similar recipe but different.
This 3 cheese dip with bacon and spinach was a big hit and got gobbled up! Every time I turned around Little Man was getting more of it. I’m pretty sure he would have eaten it by the spoonful if we had let him! We kept having to tell him that he couldn’t eat all of the dip.
We had a fun party for the Super Bowl with Dan’s family. Some people watched the game, but some of us played cards instead. I love card games, but Dan isn’t a game fan at all, so I’ve got to get in my card game fix whenever I can.
We played Nertz, which is a fast paced, crazy game, and super fun. And of course we ate a lot of delicious food, including this yummy 3 cheese dip with bacon and spinach!
Recipe for 3 Cheese Dip with Bacon and Spinach:
3 Cheese Dip with Bacon and Spinach
So cheesy and delicious, you’re going to love this 3 Cheese Dip with Bacon and Spinach!
Ingredients
- 1/2 lb Bacon, cooked & divided
- 2 C Fresh Spinach, chopped
- 8 oz Cream Cheese, softened
- 1 C Sour Cream
- 1 1/2 C Cheddar, divided
- 1 1/2 C Mozzarella, divided
- 1/2 C. Parmesan
Instructions
- Preheat oven to 400 degrees.
- Chop bacon and spinach, and set aside.
- In an 8x8 pan, stir together cream cheese and sour cream.
- Stir in 1 Cup each of mozzarella and cheddar cheese, and all of the Parmesan cheese.
- Stir in spinach and 1/2 C. chopped cooked bacon.
- Sprinkle with remaining mozzarella and cheddar cheese.
- Bake for 25 minutes, until bubbling hot.
- Top with remaining bacon and serve.
