Breakfast casserole bites make your mornings easy!
I made this fabulous breakfast casserole for Christmas morning last Christmas and the one before. My kids love it! And I love that it’s easy to make. So when my friend Kerry invited me over for brunch one weekend, I decided to try making it in breakfast casserole bite form, to make it easier for everyone to share.
The result was perfect! In fact, my kids like the breakfast casserole bites even more than they like the breakfast casserole! In fact, these were so well received that they’ve become one of my go-to recipes for these types of events.
I make it even easier by buying the 3 lb. package of sausage at Costco and cooking it all up at once. Then I divide it into thirds and throw each third into a freezer bag. When I’m ready to make breakfast casserole bites, I just pull a bag out of the freezer to thaw, or put it in the microwave for about 30 seconds.
Breakfast casserole bites are great for an on-the-go breakfast option, as well. Make up a batch on Sunday, put them in the fridge, and have a delicious breakfast all week long! They last well in the fridge. You can heat them up for about 30 seconds to 1 minute in the microwave, or you can even eat them cold. So these are a fabulous option if you find that you just don’t have time to make a good breakfast each day!
I have this awesome 24 cup muffin pan that works awesome! I double the recipe (make sure your blender is big enough or you’ll have a crazy mess!), and bake up 24 breakfast casserole bites all at once!
You can also switch things up with these breakfast casserole bites to make them fit your family’s tastes. I love them with chopped onion and red bell pepper. They’re delicious with bacon. My friend Lucy doesn’t do well with cheese, so I always make her a few without cheese, and she loves them.
If you’re trying to eat a little healthier, you can use chopped cooked chicken, or leave out the meat altogether and load them up with veggies. Add in some chopped fresh spinach, broccoli, mushrooms, carrots– the options are endless!
***IMPORTANT NOTE*** I normally just make these breakfast casserole bites in a greased muffin tin. That’s how you’ll want to make them. For the photos, I decided to make them in muffin liners because I thought it would be easier to take pictures of. But they don’t come out of the liners very well, so don’t make them in liners!
Breakfast Casserole Bites
Breakfast casserole bites make your mornings easy! These are the best on-the-go breakfast recipe!
Ingredients
- 1/2 lb. Sausage, cooked
- 1 C. Cheese, grated
- 3 Eggs
- 1 1/2 C. Milk
- 1/2 C. Bisquick
- 1/4 C. Butter, melted
- 1/4 tsp. garlic salt
- dash pepper
Instructions
- Grease muffin tin and preheat oven to 325 degrees.
- Divide sausage and cheese among muffin cups.
- Place remaining ingredients in a blender. Blend for one minute. Pour into muffin cups.
- Bake for 15 minutes, or until a toothpick inserted in the center of one of the breakfast casserole bites comes out clean.
- Serve immediately, or store in an air tight container in the fridge.
Notes
You can easily double this recipe, but make sure your blender or food processor has the capacity, so you don't end up with a mess.
