We are big fans of muffins at my house.  I make muffins regularly, because they are great for breakfast or for snacks.  And their portability makes them so handy!

Some of our favorite muffins are:

Strawberry Muffins

Why do these muffins have cream cheese in them?

Adding cream cheese to these Raspberry Cream Cheese Muffins serves 2 purposes.  First, it adds amazing depth of flavor.  These muffins are so delicious!

Second, the cream cheese makes these muffins so moist and fluffy.  Seriously, they’re dreamy! 

If all the yummy cream cheese wasn’t enough, this muffin recipe is also packed full of fresh picked raspberries and chocolate chips.  Yum!

How to Bake with Raspberries:

Baking muffins with raspberries can be a bit challenging.  It is so easy to damage the berries when folding them in.  

In order to keep the raspberries as intact as possible, you’ll want to work with fresh raspberries.  The longer they’ve been in your fridge, the more easily they’ll mush, so use raspberries that were picked in the last day or two, or ones straight from the store.

If your raspberries are a bit older, you may want to drop several in the muffin cup, add some batter, drop in a few more, and top with more batter, to be certain they retain their shape.  But since that’s more work, we recommend simply using fresh raspberries instead.

Can Raspberry Cream Cheese Muffins be made with frozen raspberries?

You can definitely made this muffin recipe with frozen raspberries.  You’ll want to allow the raspberries to thaw slightly.  However, raspberries that have been frozen and then thawed are often much more delicate, so you will need to be extremely careful if you don’t want to make a mess of them.

Chocolate Chip Raspberry Cream Cheese Muffins

Chocolate Chip Raspberry Cream Cheese Muffins

Packed full of flavor, these chocolate chip raspberry cream cheese muffins will have everyone coming back for more!

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup butter, softened
  • 8 oz. cream cheese, softened
  • 1 1/2 cups sugar
  • 2 tsp. vanilla extract
  • 4 eggs
  • 2 cups fresh raspberries
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350º.  Line muffin pan with liners, or grease.
  • In a medium bowl, stir together flour, baking powder, and salt. Set aside.
  • In a large bowl, cream butter, cream cheese, and sugar together until well mixed.
  • Add vanilla.
  • Add eggs, one at a time, beating well after adding each one.
  • Add flour mixture to egg mixture a little at a time, until completely incorporated.
  • Add chocolate chips and raspberries, and gently fold batter until mixed in.
  • Divide batter between muffin cups.  They may seem quite full, but it will work.
  • Bake 20-25 minutes, until a toothpick inserted in the middle of the middle muffin comes out clean. Enjoy!
