It seems like trying to come up with a new amazing recipe can be a lot of work, so when you find a fabulous recipe, you try to use it over and over. Such is the case with these peach streusel muffins.
I tried another blogger’s recipe for peach streusel muffins, but when it came down to it, I ended up going back to my fresh strawberry muffin recipe, and changing out the strawberries for peaches and adding streusel. I had two people try both my muffins and another recipe, and they both picked my muffin recipe, so I know I’m not being biased in saying it’s a great recipe!
The even better part about my recipe for peach streusel muffins is that it was much quicker to make than the other recipe I tried! You definitely can’t complain about muffins that both taste better and are easier to make!
So the funny story behind making peach muffins:
My friend Lucy loves peaches. We attend a Bible study together, and we were having a brunch to kick off a new study, so Lucy said I should make peach muffins. She’s the one who sent me the original peach streusel muffin recipe, and I went ahead and made them for her.
As I was driving to Bible study, Lucy sent me a text that her daughter was sick, and so she wouldn’t be at the brunch. I put one of the peach streusel muffins in the freezer so I could still get her one. But every time I got together with her, I kept forgetting to grab the frozen muffin.
I finally got it to her today, along with one of the peach streusel muffins made using this recipe. Better late than never, right? Turns out she thought this was a delicious muffin, and liked it better than the previous recipe I had tried.
One thing you should know about these muffins: the streusel doesn’t turn out pretty. Both recipes I made had ugly (but tasty) streusel. For my recipe, I used the streusel from another of my recipes, so I know it usually turns out.
Something about these peach muffins causes ugly streusel. So be aware of that– if you can’t handle ugly streusel, feel free to skip it. The muffins will still taste amazing!
Peach Streusel Muffins Recipe:
Peach Streusel Muffins
Filling Peach Streusel Muffins are a great choice for breakfast or a snack!
Ingredients
For the Streusel:
- 1/4 C. Flour
- 1/4 C. Brown Sugar
- 2 Tbsp. Butter
- 1/4 C. Pecans, chopped
For the Muffins:
- 1 1/2 C. Flour
- 3/4 C. Sugar
- 2 tsp. Cinnamon
- 1 1/2 tsp. Baking Powder
- 1/4 tsp. Salt
- 1/4 tsp. Baking Soda
- 1/2 C. Butter, melted
- 1 Eggs
- 1/2 C. + 2 Tbsp. Milk
- 1 C. Fresh or frozen peaches, chopped
Instructions
- Preheat oven to 375 degrees. Grease 12 muffin cups, or put liners in.
For the Streusel:
- In a small bowl, stir together flour and brown sugar. Cut in butter until the mixture resembles fine breadcrumbs. Stir in pecans and set aside.
For the Muffins:
- In a medium bowl, stir together all of the dry ingredients.
- In another bowl, melt butter. Whisk in egg and milk.
- Add the wet ingredients to the dry ingredients and stir until just moistened. Fold in the peaches.
- Divide the mixture evenly between the muffin cups. Top with streusel.
- Bake 18-20 minutes, or until a toothpick inserted in the center of the center muffin comes out clean.
