Canning Elevation Charts are imperative for safe processing of your foods at home. Included are both water bath and pressure canning charts.

You might not think much about your elevation in every day life, but when it comes to canning, elevation is pretty important.

For water bath canning, those of us at higher elevations must process our jars for longer than those at sea level.

For pressure canning, elevation will make a difference in how many pounds of pressure you’ll need to process your jars at, but the processing time won’t be any different.

Most canning recipes are written with directions for canning at below 1,000 feet elevation. If you live at a higher elevation, you’ll need to consult these Canning Elevation Charts and add more processing time for water bath canning, or process at a higher pressure when pressure canning.
