Find out how easy it is to can pineapple at home with a water bath or steam canner! This recipe is for cold packed pineapple, canned it it’s own juice with no sugar added.

How to Preserve Pineapple at Home

Pineapple can be preserved by freezing it, dehydrating it, or canning it. Canning makes it the easiest to use at any time, in any recipe, so that’s how I prefer to preserve fresh pineapple.

I love that canning my own pineapple means I can make it with no added sugar. Plus it’s a great way to take advantage of great sales prices on pineapple.

Can I water bath can pineapple?

Yes! Pineapple is typically canned using a water bath canner. I use a steam canner, but the directions are the same for either water bath or steam canner.

A pressure canner is not needed for canning fresh pineapple.

Should pineapple be canned in regular mouth or wide mouth jars? What size of jars should I use?

I can all of my pineapple in pint jars. I find that it’s the size that works best for me.

This recipe is written with processing time for pints. If you would rather can in quarts, add an additional five minutes of processing time.

Whether you use wide mouth or regular mouth jars is a matter of preference. I use whatever I happen to have nearby at the moment. I don’t find that either is easier or better when it comes to canning pineapple.

Should I change the processing time for my elevation?

This recipe has canning instructions for elevations up to 1,000 feet above sea level. If you live higher than 1,000 feet, you’ll need to add processing time as shown in these canning elevation charts

What is the process of canning pineapple?

Canning pineapple is so easy when using the cold pack method. The peels and core are boiled, to make a juice. While that’s cooking, the fresh pineapple is cut and packed into jars. The juice is ladled over the pineapple, and the jars are processed.

Ingredients

  • 1 Fresh Pineapple
  • Water

Instructions

  • Wash and sanitize jars, and wash lids and rings. One pineapple makes about 4 pints of canned pineapple.
  • Peel and core pineapple, and put the peels and core into a large pot.
  • Cover with water. Heat over high until boiling.
  • Let peels and core simmer while preparing pineapple.
  • Chop pineapple, and pack into clean, sterilized jars.
  • Ladle hot juice over the pineapple to 1/2" headspace.
  • Wipe rims, put on lids and rings, and process in a water bath or steam canner for 15 minutes. See Canning Elevation Chart if you're not below 1000 feet in elevation.
  • Remove from canner, and let cool.
  • Check seals. If any jars didn't seal, they will need to be refrigerated and used within a week.
