For my son’s 8th birthday, I wanted to make a few fun recipes that would make the day feel special. This Strawberry Rhubarb Lemonade was one of those recipes.
In order to make Strawberry Rhubarb Lemonade, you’ll first need to follow the directions to make this easy Strawberry Rhubarb Simple Syrup. It is made with fresh strawberries and rhubarb, along with sugar and water. Even a beginning cook can make this recipe.
I chose strawberries and rhubarb since they’re both growing well right now in my area. However, you could definitely freeze the rhubarb and strawberry, if you want to be able to make this during the winter. Alternatively, you could make the simply syrup and can it.
When looking up flavors that go with rhubarb recently, I was shocked to see that strawberry wasn’t on the list. For me, the perfect combination is strawberry and rhubarb. Their flavors balance well together, and foods with the two flavors end up being so delicious.
This Strawberry Rhubarb Lemonade was a huge hit with both kids and adults alike! The entire container was finished off quite quickly, and I was wishing I had made more! I really hadn’t expected kids to like it as much as they did.
Strawberry Rhubarb Lemonade

Made with fresh strawberry rhubarb simple syrup, this Strawberry Rhubarb Lemonade is a refreshing and fun twist on the classic drink.
Ingredients
- 1 1/2 cups lemon juice
- 1 1/2 cups rhubarb simple syrup
- 1/3 cup sugar, (to taste)
- 10 cups water
Instructions
- In a pitcher, stir together lemon juice, simple syrup, and 1/3 cup sugar, stirring until sugar has dissolved.
- Add water.
- Add additional sugar, if needed.
