When I stumbled upon this delicious looking recipe from Flavor the Moments, I knew I needed to make it. Cranberry and orange go together so well, and combined with oatmeal it sounded like the perfect breakfast recipe. I can tell you that it didn’t disappoint at all!
Having never made baked oatmeal before, I wasn’t sure if it would be very hard to make. I was surprised to find out that it’s really easy to make Cranberry Orange Baked Oatmeal. Just a few minutes prep, and 30 minutes of baking, and you’ve got the perfect breakfast for Christmas morning or a brunch date!

Cranberry Orange Baked Oatmeal
Cranberry Orange Baked Oatmeal is an easy breakfast recipe that's simple enough for any day, but fancy enough for special breakfasts and brunches.
Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cardamom
- 1/4 teaspoon salt
- 1 egg
- 2 cups milk
- 1/3 cup maple syrup
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries
- 1/2 cup pecan pieces
For the Glaze:
- 2 oz. cream cheese, softened
- 1/2 cup powdered sugar
- 1 tablespoon fresh orange juice
- 1 teaspoon orange zest
Instructions
- Spray a 9x9 pan. Preheat oven to 350º. If you don't have your cream cheese softened already, get it out now.
- In a large bowl, mix oats, baking powder, cinnamon, cardamom, and salt.
- In a small bowl, beat egg. Add milk, maple syrup, orange zest, and vanilla extract. Whisk well.
- Pour egg mixture over oat mixture, and stir to combine.
- Gently stir in cranberries and pecans.
- Pour into prepared pan.
- Bake 30 minutes, until set and golden.
- While oatmeal is baking, make glaze.
- In a medium bowl, beat cream cheese.
- Add powdered sugar and beat until smooth.
- Add remaining ingredients and beat until smooth.
- After oatmeal is done, allow to cool for 5 minutes before glazing.

I love eating oatmeal for breakfast. But I haven’t made any fancy flavors, I just eat it from a package. I’ve always wanted to try the overnight oats in the crockpot. Maybe I will make that for Christmas this year. The cranberry orange sounds delicous too.
